Description:
Char Kway Teow is a Teochew dish of flat rice noodles (Kway Teow), that is stir-fried in pork lard over very high heat, with light soy sauce, dark sweet soy sauce, eggs and chili shrimp paste (Sambal Belacan).


Char Kway Teow is served garnished with bean sprouts, sliced chinese pork sausages (Lup Cheong), shelled prawns, shelled cockles, sliced fish cake, chinese garlic chives and fried pork lard cracklings.

While the ingredients are simple, preparing a good plate of Char Kway Teow takes great skill. This is because the balance of soy sauce and chili has to be just right and the ingredients have to be added at exactly the correct moments in the frying process.

Furthermore, the hawker must have a good mastery of temperature and fire control of his wok (Wok Hei - Breath of the Wok).

A good Char Kway Teow should have noodles that carry a slight char and caramelization, while still being smooth. It should have the sweetness of the soy sauce, complemented by the savoury coating of semi-scrambled eggs and pork lard.

The bean sprouts should give a fresh crunch instead of being limp, and the cockles should be medium rare.

While various regional variations exist, notably the Penang style Char Kway Teow, the Singaporean style Char Kway Teow is normally sweeter, as compared to other versions which are more savoury.
