Description:
Chicken Tikka Masala is a British dish, invented by a Punjabi chef, in Britain, United Kingdom. It has since spread back to North India.


Chicken Tikka Masala consists of chunks of boneless pre-marinated chicken, usually Chicken Tikka, in a smooth, mild curry.

The deboned chicken in Chicken Tikka Masala is first marinated with a mixture of plain yoghurt and tandoori masala, then roasted in a tandoor oven.

Some variations grill or pan-fry the chicken instead.

The curry for Chicken Tikka Masala is made with garam masala, salt, onions, garlic, powdered cumin, cloves, chili, powdered turmeric, cinnamon sticks, powdered coriander, ginger, pepper, fenugreek leaves, tomato puree and fresh cream / coconut cream.

Some hawkers may also add cardamom seeds, bay leaves, sugar, chicken stock or lemon juice.

The difference between Chicken Tikka Masala and Butter Chicken is the inclusion or exclusion of the following ingredients: butter, coconut cream and garam masala. Thus, the taste and texture of Chicken Tikka Masala will be slightly heavier and more grainy as compared to Butter Chicken.

The pre-marinated chicken and curry are combined, and cooked until done. A good Chicken Tikka Masala will have a relatively smooth, mild curry, which complements rather than overwhelms or disguises the chicken meat. The chicken should have a hint of smokiness, while being slighly chewey, without being overly spiced or dry.

Chicken Tikka Masala is often accompanied by Indian breads or rice.
