Description:
Laksa is a fusion dish of Peranakan culture, combining Chinese and Malay influence, from Southeast Asia. While there are different variations on Laksa, in Singapore, it refers to a spicy coconut curry soup with thick rice vermicelli noodles (Chor Bee Hoon).


The spicy coconut curry soup for Laksa is made with garlic, ginger, chili, candlenuts, dried prawns, shrimp paste (Belacan), lemongrass, vietnamese coriander / laksa leaf and shallots.

Once these ingredients are fried, water, chicken stock, thick rice vermicelli noodles (Chor Bee Hoon) and coconut milk is added, and slowly boiled till done.

Laksa is traditionally garnished with fish cake, prawns, cockles, bean sprouts and fried tofu puffs. Some hawkers also include shredded chicken meat, hard boiled eggs or chili paste (Sambal).

A good Laksa should be savoury without being too salty or heavy on the palate. The soup should be spicy, with slight grainy bits of dried shrimp.
