Description:
Dhal is a dish of pulses / legumes (dried lentils, beans or peas), made into a thick stew / wet curry. While Dhal originated in India (North & South), there are many different variations of Dhal, and it is popular throughout South Asia.


The dried lentils, beans or peas used in Dhal are stewed together with water, chili, groundnut oil / clarified butter (Ghee), curry leaves, cumin seeds, powdered turmeric, garlic, ginger, salt, pepper and fenugreek seeds.

Some hawkers also include tomatoes, onions, cloves, cinnamon sticks, cardamom, garam masala or mustard seeds. Dhal is garnished with coriander leaves.

A good Dhal should be cooked low and slow for maximum creaminess. Dhal can be made thin, like a soup / broth, or thick, like a porridge.

Dhal is often served with Indian breads or rice, and is an excellent source of protein for vegetarians, rich in Vitamin B, and nearly fat-free.
