Founded in May 2017, The Raclette Factory is a pop-up stall specialising in raclette cheese air-flown from France. This semi-hard cow's milk cheese is most commonly used for melting. The founders have decided to use halal raclette cheese, though The Raclette Factory itself is not halal-certified.

Ambience at The Raclette Factory is almost non-existent, as it's a pop-up kiosk, where all orders are takeaway. There is no seating of any kind. The atmosphere of the bazaar around them is bustling and crowded, subject to the weather of the day, so it really depends on whether you like it or not.

Service at The Raclette Factory is completely self-service. Be prepared to queue at least 15 minutes before being served. Part of the appeal is that you get to watch the preparation at all stages, from the melting of the raclette cheese, to the cooking of the other ingredients. When all items are ready, customers are served very quickly, clearing the queue fast.

Food at The Raclette Factory is focused on 1 main item - gooey melted raclette cheese, served over chicken sausages and baby potatoes. I love the combination of flavours and textures. Portion size is designed for individuals, but most people share. Prices are relatively higher than other stalls, budget about SGD $12 per person.

The cheese is vigorously blow-torched, then scraped off the cheese wheel and ladled over the ingredients. Popular in both France and Switzerland, the term 'raclette' is derived from the French word 'racler', which means 'to scrape', a reference to scraping the melted cheese from the unmelted part of the cheese wheel.

With The Raclette Set (SGD $12), you get a heaping portion of gooey, melted raclette cheese, with its sweet salty notes, over a bed of pan-fried baby potatoes and boiled chicken sausages. Nice complement of flavours, and the addition of garlic lends a lovely fragrance. Best eaten while piping hot.

Update Nov-2018: Been over 1 year since I saw The Raclette Factory kiosk at an event. This time, encountered them at the Let's Go Jalan Jalan 2018 event. The Raclette Factory has partnered, for this round only, with a drinks provider, and the menu has changed slightly since I last saw them.

They still perform the signature Raclette Torching, and subsequent scraping off the cheese over the dish, though this eye-catching gimmick has lost much appeal since it debuted. At least the raclette cheese is still good quality.

The Rosti Raclette & Chicken Sausages (SGD $13) has slightly increased in price, and they've replaced the boiled baby potatoes with what they term 'potato rosti', though it's more like a potato hash, with crisp fluffy bits. Still served with chicken cocktail sausages, and generously coated with gooey raclette cheese. Has that lovely cheesy fragrance, with a savoury salty sweet cheesy flavour. Decent at best, underwhelming at worst. Not something I would order again.
