Description:
Lor Mee is a Hokkien dish which consists of thick, flat egg noodles in a thick, starchy braising gravy. Due to its nature, Lor Mee is typically quite filling when consumed.

The thick, starchy braising gravy for Lor Mee is made by boiling pork belly, pork ribs, pork bones, fried prawn shells, salt, pepper, chicken stock, garlic, onions and sugar to get a flavourful stock, which is then strained.

Then, eggs, light soy sauce, dark soy sauce and star anise is added. Some hawkers also include 5-spice powder or oyster sauce.

The thick, flat egg noodles are added together with hard boiled eggs and bean sprouts. Finally, tapioca starch or corn flour is added to thicken the gravy.

Besides noodles, hard boiled eggs and bean sprouts, Lor Mee is also garnished with sliced pork belly, fish cake, deep fried battered fish slices, fried pork meat balls and 5 spice roll.

Some hawkers also add lean pork slices, fried chicken meat balls, pork ribs or prawns.

Finally, Lor Mee is garnished with black vinegar, minced garlic, chili paste (Sambal), sliced red chili, pepper, fried fish cracklings, pork lard and coriander.

A good Lor Mee should balance the salty, savoury, sour, sweet and spicy flavours. The braising gravy should be thick and gooey, but still able to coat the noodles and ingredients evenly. The fried ingredients should not soften too quickly in the braising gravy.
