I rarely write about food from a food court in Singapore, because the mass produced, economical and standardised food tends to be rather bland, lacking in flavour and taste. Combined with hired workers who may or may not have formal training in cooking, the result is average, forgettable and largely not value for money food.

So it's a pleasant surprise to encounter a stall in a food court like Pots & Pans, which produces pretty tasty, good quality food. And judging by the near constant long queue Pots & Pans commands during lunch and dinner, it seems many others would agree that this stall is pretty good as well.

What sets Pots & Pans apart from other similar stalls is not the ingredients, as food courts typically purchase mass produced ingredients in bulk for economies of scale. Rather, it is the skill of 1 chef, a somewhat older man (uncle), who mans the grill here. Watching him cook is almost like seeing a dance, he moves so quickly and purposefully while preparing the food.

The wok hei (breath of the wok) is evident in both the taste of his food, as well as the occasional visual spectacle of a nearly 1m tall flame that shoots from his grill while he's cooking. He also serves up food pretty quickly as well, and typically can clear in long queue in minutes, though the queue reforms again very quickly.

Another key strength of Pots & Pans is the intense, bold flavour in their sauces / gravy, which enhances the entire dish it's used on. Pots & Pans has 4 special house-made gravy / sauce, namely, black pepper sauce, chili sauce, beef meat gravy and mushroom sauce. Pots & Pans is located within the Bagus food court at the basement of Changi City Point mall, near the open foyer. I wonder how the stall operators next to Pots & Pans feel, seeing the Pots & Pans queue stretch pass their stalls...

The Black Pepper Chicken Hot Plate Set has a rather flat chicken steak, though it has nice flavour from being well grilled. But the real kicker is the spicy black pepper sauce, which is rich and thick, and lifts the overall taste of the dish.

The Chili Grilled Fish Hot Plate Set has a lightly breaded and grilled fish with firm flesh, half covered in a fiery chili sauce. Definitely not for the faint of heart, the chili burn built till I was close to tears near the end of the dish. But the pain felt so good...
